Train Tracks



Sometimes I like to take walks down the train tracks. Sometimes I also like to wear flowers in my hair. This past weekend, I got to do both. And since it will probably snow again sometime mid-March, I'm taking full advantage of this faux-spring. The weather this weekend cooperated perfectly with my plans for spending most of my time outside, and this week is looking equally lovely. Ah, faux-spring how I do love you, even if you aren't real.

Five {little} Blessings


As you probably assumed from my last post, this past week was incredibly busy. In all honesty, I've been struggling with being separated from my husband and with the overwhelming amount of things on my to-do list. Sometimes it just seems like too much, you know? Nonetheless, I easily found five little ways to stay positive. Because in the end, all you can do is your best... and my grades really don't matter that much in the grand scheme of things. Here are five things currently making me very happy.

Wearing skirts & dresses without tights.

New strawberry plants.

Gluten-free brownie mix.

Playing in the park on Saturday afternoon.

A hang glider flying over our apartment.


Here's looking forward to a couple weeks with less commitments and more down time.

Overload


Between course work, completing my clinical seminar, side projects with professors, working, fitting in a workout schedule, and trying to maintain a sense of normalcy with my living situation, this sums how I've been feeling lately. {I'm one of the little birds, in case you didn't catch that. Except that I somehow got separated from the group & don't have all those other birds to help out.} I have archived outfits for the 30 for 30 that will be going up sometime this weekend or whenever I find my sanity.

Yellow Belle


For the past few spring seasons, I have shied away from the color yellow. Perhaps it's because of my pale complexion, a need for pink {which honestly never fades}, or simply my love of patterns, I rarely buy yellow. In fact, I own exactly one yellow top. (Seen here.) That being said, I think it's about time to increase the amount of yellow in my wardrobe. From soft, buttery hues to vibrant sunshine colors, here are some of my favorites.

This past week finished out the whirlwind of tests and meetings that have consumed my life for the past few weeks, and goodness, I am happy. While this week will be spent preparing for another exam on Friday, I am thankful for the small respite from school. At least this week won't be quite as demanding as its previous counterparts. It's a Plaid Plaid World



I don't really own a lot of flannel. It basically comes down to a set of sheets and this one shirt, but this shirt is perfect for so many things. Camping, day hikes, and general frivolity in the mountains. Or just general frivolity. And while this outfit isn't groundbreaking, it's great for school. Plus, the soft fabric makes me feel like I'm still wrapped up on those warm, cozy sheets all day long...

Caught Blue-Handed



I have a confession to make. This blue cardigan is not actually part of the remix. (!!!) However, it was so cold in the early mornings of this past weekend, and my favorite little silk dress just couldn't withstand the wind. So I had to cheat. I {thankfully} left this little blue guy at home for situations such as this. The added layer was exactly what this outfit needed. So I figured that a little bit of cheating was okay. Just this once, I promise. {That is, unless I forget to bring home something warm again.....}

Orange You Glad



Look at that brilliant blue sky and sunshine. Makes you think spring has made it's way to the south, but no. It was windy and cold when these pictures were taken. Nonetheless, I felt that the combination of green, orange, and yellow was quite suitable for a sunny Sunday afternoon. Though after seeing that color combination printed out, it sounds more like a Sprite commercial and less like an outfit post....

Non-Traditional Biscuits


I don't think I've ever mentioned this before, but husband and I eat what I refer to as a "modified" paleolithic diet. It amounts to "good" grains such as quinoa and brown or black rice a couple times a week, zero flour or refined sugar {we use local honey for sweetener}, limited dairy {cheese a couple times a week, grass-fed butter, but no milk}, and TONS of lean protein and vegetables. {You can read more about the Paleo diet here and here.}

All that being said, I obviously cheat sometimes, especially on the weekends. {Hello, cheddar-dill scones} Lately, however, I've really been making an effort to change my cheating habits. So, instead of making traditional biscuits for Saturday breakfast, we made paleo biscuits. Definitely a hit. The texture is more like a corn muffin and less like a biscuit, but the taste was spot on. Add in the knowledge that these lovelies are healthy alternatives to an otherwise indulgent breakfast, and you've got me hooked.


Mix:
1/2 cup almond flour
1/4 cup coconut flour
1/2 tsp salt
1 tsp baking powder
in a small food processor.
Add in 1 tbsp cold grass-fed butter (or coconut oil if you prefer) & pulse
until butter is in small pieces.
In a separate bowl beat 4 eggs (or 6 egg whites) until frothy.
Add the eggs to the flour in the processor & pulse a few times to incorporate.
Transfer to the bowl and mix in about 2 tbl spoons of almond milk*
*You may need a bit more or less depending on the consistency of the batter. It should be somewhat doughy, but these biscuits don't rise, so they will be about the same thickness after baked. I like mine a bit thinner to make the biscuits less dense.
Grease 6-7 muffin cups with coconut oil & place batter into the cups.
Bake at 400 for about 15 minutes.

Add your favorite all natural, sugar free preserves, some high quality turkey sausage & a side of fruit and you've got a delicious breakfast!

Conservative & Professional

Sometimes I think that if I hear that phrase one more time, I just might lose my mind. Given my career choice, however, "conservative and professional" is much more than just a phrase. It's exactly what I have to be. I've mentioned before how it's often a struggle. I don't want to sacrifice who I am or my personal style, but I also can't afford don't want to be known as "the girl with the weird necklace" or "the one with the strange clothes."

Much like one of my favorite bloggers, I tend to mix solid separates and typically avoid overly bold prints. I also keep my jewelry to a minimum, often settling for pearls or small chandelier earrings like these. And while this outfit isn't the most fashion-forward, it's {mostly} work appropriate. The only thing I changed was the shoes. Too eye-catching, but lovely none the less.
