Meal Planning: 9/30 thru 10/5


 While the idea of meal planning seems to be everywhere these days, it's definitely nothing new to a paleo household. I'd even say it's critical for eating clean on a daily basis. I often get questions about what my daily meals look like, so I'm hoping this will help. Each Sunday, husband and I spend a few hours in the kitchen making a huge mess preparing food for the week - typically one or two dinners, something for lunch, and either a breakfast dish or a snack. Here's what we cooked {and are eating} this week:

Breakfast
I used sliced ham instead of prosciutto, fresh chopped kale instead of spinach, diced green onions instead of sauteed onions, and omitted the mushrooms. I've also recently become obsessed with roasted garlic, so I used that instead of its raw counterpart.
Pair a muffin {or two} with a handful of almonds or cashews, half a grapefruit, or some breakfast sausage. Delicious and portable!

Lunch
Left-over spaghetti squash and meatballs from the weekend {a good sauce is key for this dish} OR mix green salad with oven-baked chicken and homemade paleo ranch OR sweet potato, bacon and egg salad {also a good breakfast option} with a mix green salad.

Dinners
Nom Nom Paleo's thai curry chicken with asian cauliflower fried rice. I made a few edits here too, using whatever veggies I had on hand, which happened to be carrots and broccoli for the curry. I also left out the bacon for the rice since we were eating it with the curry and omitted mushrooms {not big mushroom fans over here} and the Red Boat Fish sauce because I can't find it at the store. This dish will feed us two nights and maybe one of us for lunch.
 
Health-Bent's pumpkin chili with avocado cream. I'm a sucker for anything pumpkin, and this is one of our all time favorite chili recipes. We add diced butternut squash into the mix for more texture and some extra veggieness. The avocado cream is delicious, but if you don't have time to make it, no worries. The chili is great on its own. Plus, it freezes well and makes for good leftovers!

Snacks
I saw this recipe for GF homemade cereal bars the other day and decided to give it a shot. I plan on making a blueberry version of these tomorrow during my off day to use for snacks or for breakfast. {I leave the house by 6:30am most mornings, so I usually opt for grab and go foods.} Not stirct paleo, but most treats aren't.


We made the curry & rice and egg muffins on Sunday and also baked chicken for salads and cut up veggies for snacks. Tuesday I plan on making the cereal bars and the pumpkin chili. And that's how we do it!

Week Ending

I think it's safe to say that fall is well on its way, with crisp cool mornings and evenings occurring almost daily. I couldn't be happier. This is by far my favorite time of year.

This weekend will be pretty calm since husband is working Saturday, but we've been making lots of plans for the month of October. What are you doing this weekend?

I will be...
- trying out some new paleo recipes {I went on a pinning spree the other day}. this one looks particularly good
- making a few extra meals to fill our new freezer {more on that later!}
- attending a wedding shower for one of my childhood friends
- hopefully going to meet baby Brooks {so. cute.}
- perusing the antique store for the perfect mid-century sideboard

Black & Blue

Although I own a fair amount of blue clothing, this top has quickly become a favorite. The flowy silhouette, contrast piping, and uneven hemline make the solid royal blue {a favorite of mine} even more interesting. Added bonus -- it pairs equally well with black skinnies and flared jeans, making it versatile enough for both work and play.

Weekend Adventure: Camping at Tate Branch



If you've read this blog for any length of time, you know that our favorite way to escape the world and find solace is in the outdoors. So a couple weekends ago, we decided that a low-key camping trip was in order. We packed up the tent, some good food, our hiking gear and our pup and headed north to the Nantahala National Forest {my favorite} for a couple nights.

Our itinerary was low-key, starting with a a half day hike on Saturday to the top of Big Scaly Mountain. It was eight miles round trip... four uphill and four down! {Our legs were a bit sore the next day.} Then, we spent the afternoon relaxing and reading next to the river. Husband built an amazing campfire and we ate and talked next to the fire until it dwindled out. Sunday morning we woke up and explored the river a bit, husband fished, Sam played in the water. 


it was just what we needed, and we can't wait for our next camping trip that's coming up in October. {Last year's birthday trip was so completely perfect, that I've been dreaming of Standing Indian for the past couple weeks!}

Have a Fabulous {Fall!} Weekend!


As I'm writing this, the windows in our sunroom are open and letting in the most delicious, cool fall breeze. What a great way to start this day and to start the weekend! 


These next couple days off rest are actually pretty full for us, and I am excited for our plans...

- visiting my girl kindredly {who is about to become a mom! I seriously can't wait} and seeing baby Brook's nursery
- hopefully visiting my new fairy god son this afternoon, who will be the perfect start to a great weekend {yes, both my besties are about to have littles! so exciting!}
- time for quiet reflection and reading and discussing this book 
- morning coffee on the front porch
- firing up our grill and eating dinner on the patio beneath our new twinkle lights
- baking something pumpkin {I'm stuck between these tasty-looking muffins and my favorite GF bread}

Low-key weekends like this one, filled with friends, cool weather, and hanging out with husband on the porch/patio are my absolute favorite.

Small but Significant Changes


In an effort to live life to the fullest, minimize stress and anxiety, and increase overall health and wellness, husband and I have made some changes to our daily routines. Our journey toward wellness started four or five years ago when we transitioned to a paleo diet and lifestyle, but lately we have implemented a few new changes that are definitely resulting in more rest, energy, an greater sense of well-being. 


1. Monitor your television and internet intake
Instead of turning on the television or the computer at the end of the day, we have been making an effort to spend time reading {we have been checking out books from our local library}, sitting on the front porch {the weather has been amazing!}, or sharing our evening meal at the dinner table instead of in the living room. We definitely have shows that we enjoy {hello Master Chef}, but we typically record them and watch them together one or two evenings a week, usually after a loooong day at work.

2. Spend an hour or more each week doing yoga together
Not only is yoga great for strength, flexibility and muscle control, it's great to have a partner. Some stretches can be deepened just by having a pair of hands to hold. Also, we have found that working out together makes us work harder - we encourage and motivate each other to do our very best.

3. Read the same passage of scripture daily or have a weekly family devotional
Even if you read the Bible separately, having something common to discuss allows for great conversations and deeper insights into the Word. Often times we find different perspectives on the same scripture or generate interesting questions and insights just by talking about what we've read. This is also a great practice to start as a couple, and continue as your children grow older. {Side note, I love this website.}

4. Plan and prep your meals for the week... together
I've talked about the importance of a stocked pantry and meal planning before, and we will talk about it again soon, but putting in the effort together makes the process much easier and much more enjoyable. For us this means good tunes in the background, a specific menu with recipes, and delegated tasks for us both. We usually spend about two hours in the kitchen on Sunday afternoon. Typically we make one stovetop meal, bake chicken or boil eggs for lunch salads, toss something in the crockpot, and maybe make a frittata or paleo muffins for snacks. The key though, is that we do it all together.

5. Get eight hours of sleep
I know most of you think this seems impossible, and I know it's gotta feel that way when there are littles involved. BUT, sleep is crucial. I won't get all sciency on you, but a lack of sleep elevates cortisol, a stress hormone, which in turn prevents you from losing weight or gaining muscle, and places your body in a state of constant stress. So look for things you can cut out of your day or save for the weekend. For us, weekly meal planning and cutting out TV gives us the time during the week to get into bed on time.

6. Walk everyday
Even if you only have ten or twenty minutes, take a walk {preferably without your cell phone} together. For me, it helps clear my mind from the days events and allows husband and I to just be together, even if its only for a few minutes.

Hiatus



I took an unannounced two month break from blogging, and I apologize... but I needed some time away to process and accept some major life changes that I wasn't quite ready for. I try to make this space uplifting and encouraging, yet completely honest. And honestly, I haven't been in the best place emotionally  these last couple months.

But by the grace of God, through countless hours in prayer {which I still require today}, and with love and encouragement from friends, family and my amazing husband, I am feeling better.

So here's to being thankful for what you do have, the blessings and opportunities that are present in our lives, and the love and friendship of good people. Here's to happiness and hope in any circumstance, and to honesty above all.

{Thoughts} The Man in the Uniform

You often hear it said that women love 'a man in a uniform.' You know, the police officers, soldiers, even the suited federal agents. All the law enforcement types. But I never really fell into that category. In fact, when I was in college I routinely stated that I would never date or marry 'a man in a uniform.' I dated musicians, mostly. What can I say? I was a slightly rebellious young woman. I wanted someone unique, artistic. But despite my young words and lack of wisdom, I married a uniform. And that man is strong, caring, respectful, kind and hilarious. It's amazing how the Lord provides you with things you never even knew that you needed. Like security, protection and the promise of love and provision. I know that my husband will always do what is right, will love and protect me and our family in every way, and will fill all of my days with as much happiness as possible, even in the difficult times.

So you see that uniform doesn't just represent authority and power. It represents protection, security, endless love and support, a man who does what it right, even when it is difficult. It represents strength in the midst of uncertainty, leadership and gentleness.

Thank you, all of you men {and women} in uniforms, for being all of those things. And today especially, thank you to all of you {men and women} who wear the uniform of a soldier.

Deconstructed Omelette Salad



My current go-to egg concoction is the deconstructed omelette salad. The original idea centered around a product that is apparently seasonal at Trader Joe's, so we had to adapt our original idea, but the outcome was just a delicious as the original would have been.

Ingredients:
ghee or olive oil for the pan
plenty of organic greens {spinach, kale, spring mix}
grape tomatoes 
sauteed onions and bell pepper 
three slices of organic lunch meat {we use applegate organics}
two eggs {or however many you desire}
crumbled goat cheese {optional}
sliced avocado


Add some ghee to the pan and sautee the greens, tomatoes, and already cooked onion and bell pepper. Toss in the diced deli meat and let all the ingredients wilt and mix together. Crack in your eggs and stir as they cook to your desired consistency. Once the mixture is done, add to a bowl and top with crumbled goat cheese and/or diced avocado.

Once fall comes back around, we will revisit this recipe with a couple seasonal tweaks. I'm thinking shaved turkey, spinach, basil pesto and perhaps some cranberries...

Back to Black & White



Black and white is a combination that I often overlook. I own very little black, a fact that I am slowing changing, and usually pass up what I do have for something more colorful. But lately I've been drawn to the simplicity of black and white outfits, pairing patterns and textures instead of color. I especially love the print of this top and the hi-low hem.

{P}inspiration: Outdoor Spaces



After four days in the secret gardens of Boquete, Panama, husband and I are on a mission to transform our backyard this summer. We finally finished laying the flagstone patio {labor. of. love.}, which I promptly adorned with vintage chairs, sweetheart roses and modern white planters, and are turning our attention to taming the jungle that is the backyard landscape. {Side note: we are seriously considering renting some goats to chomp away at the brush in our yard. It's that bad.. And we don't want to use a ton of weed killers and pesticides.} We have carved out a couple flower beds to fill with Queen Anne's Lace {I see a foraging expedition in my near future} and Lantana, and are trying to decide whether or not to sod the giant bank behind our porch. Alas. Instead of boring you with the details of our backyard plans, here are some outdoor spaces/landscapes that I absolutely love.

Paleo Breakfast Recipe Roundup

One of the more challenging aspects of switching to a paleo lifestyle was figuring out what to eat for breakfast. Lunch and dinner are pretty easy, but breakfast was the bane of my (paleo) existence for a while. As much as I love eggs, sometimes I just can't stomach them in the early hours of the morning, so I had to get creative. Here are some of my go-to breakfast ideas:


 Eggs (an obvious inclusion, I know.)
- Make an egg scramble or omelette with your favorite vegetables and/or protein. Add a bit of ghee (clarified butter) or coconut oil to your pan and sautee veggies of choice, add in extra protein if desired, add in 2-3 eggs and mix around until cooked through, top with avocado or salsa (or both!)
Vegetables to include: zucchini, mushrooms, spinach, squash, tomatoes, arugula, broccoli, green onions, chopped asparagus, leeks, olives, sweet potatoes (if you need a post-workout carb source), really anything goes here.
Extra proteins to include: organic deli meat (I like Applegate Organic chicken breast slices), any type of sausage (I'm partial to Aidells's chicken & apple sausages, Publix Greenwise chicken sausages, Applegate Farms breakfast sausages are a good frozen option), crumbled bacon (I use nitrate-free turkey bacon), smoked salmon, leftover pork chops from dinner, etc.
- You can also do a frittata version of eggs + vegetables that is great for making on Sunday and reheating during the hectic work week.
- Hard boil some eggs on the weekend for a quick grab and go breakfast, paired with an apple and a hand full of raw nuts or sit down with a hard boiled egg or two and some wilted spinach
- Make egg muffins. Line muffin cups with a slice of turkey bacon, add in a few chopped veggies and crack and egg into the muffin cup. Bake at 400 for about 15 minutes or until eggs are set and browned. 


Avocado Bowls
- Another easy breakfast, bake an egg into an avocado half.
Simply scoop a little avocado out of a half to make some extra room, crack your egg into the hole and bake on a sheet at 400 for about ten minutes or until your eggs is the desired consistency. Top with the removed avocado, some crumbled turkey bacon and salt and pepper as desired.
- Spoon some homemade chicken salad or tuna salad into an avocado half and eat up! Also tasty with crumbled bacon on top.

Chicken Soup
- While it may sound strange, a traditional chicken soup makes a great breakfast, especially on cooler mornings.
Sautee onion, garlic, celery, carrots in olive oil in a dutch oven. Add in diced chicken and cook until almost cooked through. Add desired amount of organic vegetable broth and simmer on low for about thirty minutes. Add spices such as oregano, thyme and basil to desired taste.


Creamy Coconut Squash
- An easy breakfast for when you're running out the door to work, butternut squash puree is a great make-ahead and reheat option. Simply peel, remove seeds and cut 1/2 of a butternut squash into cubes, then microwave until the cubes have softened (about ten minutes total), add to a food processor with 1&1/2 cups unsweetened coconut or almond milk, 1/4 cup of pecans or almonds, and 1/4 tsp of cinnamon and 1/4 tsp nutmeg if desired. Serve warm and top with a few sliced almonds or some extra milk.


Breakfast Salads
- Top a mix of spring lettuces and spinach with a bit of fruit or olives, walnuts or pecans, crumbled turkey bacon, a fried egg or sausage or baked chicken and a squeeze of lemon or light dressing (I suggest making your own. A lemon champagne would be quite tasty, also Bragg vinaigrette is a good bottled option).

Breadless Sandwhiches
- Make a BLT or an egg sandwhich using a bell pepper or a portabella mushroom as a bread substitute. Or make these delicious cauliflower tortillas for breakfast wraps.


Cauliflower with Sausage and/or Eggs
- This is a great option for us Southerners who grew up eating creamy white grits with butter. Simply wash, chop and steam 1/2 head of cauliflower, then puree in a blender with a bit of ghee or grass-fed butter. I typically do this on a Sunday to use for the week. In the mornings I add some cooked sausage (Aidell's or Applegate)
 and/or an egg over medium (scrambled is good too), a bit of salt and pepper and maybe a bit of thyme.


No-atmeal
- For those mornings when you are really craving a traditional breakfast, a tasty combination of banana, raw nuts and almond milk satisfies your oatmeal cravings without deleterious effects.
Add 1/2 cup almonds, 1/2 cup pecans, 1/2 a banana, 1/4 tsp ground cinnamon, 1/8 tsp salt and 1/4-1/2 cup unsweetened coconut or almond milk to a food processor and pulse until desired consistency is reached. Warm the mix in a microwave or on the stove, then top with a few berries and a bit more milk as desired.
Here's another recipe that includes a few eggs for added protein and one with some extra spices that I love to make in the fall.


Crustless Quiche
- Another easy option for making ahead of time and reheating, quiche is quick and easy on hectic mornings.
For a crustless version, simply whisk together 6 eggs, 1&1/2 cups of coconut or almond milk, 1 tablespoon ghee or grass-fed butter, salt & pepper. Then stir in about four cups or so of desired vegetables (if using broccoli, I suggest steaming it first) and pour the mixture into a pan and bake at 425 for about 20 minutes or until the middle is set.
If I have a week full of early mornings when eggs may not sound appealing, I will use the almond flour crust from this recipe for a quiche. Simply mix eggs and desired veggies and pour into a pre-baked crust. Bake for about 15-20 minutes. 


Vegetable Bowl
- Skip the protein and load up on veggies.
Lightly sautee mushrooms, onions, spinach, broccoli, zucchini and any other vegetables. The more the merrier! Top with avocado or homemade salsa.
- Kale with sweet potatoes is one of my favorite vegetable combinations.
Dice and bake a sweet potato, sautee kale with onions on Sunday. Mix them together in the morning for a quick and easy breakfast to go. This is also good with some steamed broccoli.

Berry Pancakes (great for Saturday mornings)
- There are quite a few pancake recipes using almond flour (this book has a good one), and while those are a good alternative to traditional pancakes, they are still not great. A definite treat, in my opinion. A good alternative to almond flour pancakes is this recipe from Primal Blueprint: (makes 4 servings)
Heat 3 tablespoons grass-fed butter or ghee in a 10-inch skillet (I like to use a cast iron), and add 1 cup of mixed berries (I use a combination of blueberries & strawberries). While the berries simmer, beat 4 egg whites with an electric mixer until stiff peaks form. In a separate bowl, whisk 4 egg yolks for 1-2 minutes, add 1 teaspoon of vanilla extract and 1/2 tsp cinnamon, then fold in the egg whites. Spread the egg mixture over the berries and cook for a couple minutes, then transfer to a preheated oven at 400 degrees. Bake for about ten minutes, until the egg mixture is browned and puffy. Remove from oven and invert onto a plate so tha the fruit is face-up. Garnish with a few berries and enjoy!


This is not a completely inclusive list, but just a few ideas that we make pretty regularly. Another favorite place for great breakfast ideas is PaleOMG. That girl makes some tasty breakfast casseroles, including some that are crock-pot friendly for those of us with hectic schedules. (Total girl crush. I'm not ashamed.)

Back to Reality



Husband and I spent the last eight days exploring and adventuring in the Chiriquí providence of Panama. Zip lining, waterfall hikes, white water rafting, exploring volcanic islands, incredible food (including the freshest fish possible)... In short, it was amazing. I didn't want to leave. And I probably wouldn't have left if it weren't for things like missing my family and friends. Oh, and those pesky student loans and mortgage payments. 


I have some posts coming up detailing our trip, the hotels and activities. Oh, and some pretty amazing pictures.

Secret Garden



One of my favorite places to sit and read or share a cup of coffee and conversation is my parent's backyard. We spent countless hours outside as children, helping dad cut the grass and build walkways or helping mom plant window boxes and create beautiful flower beds. It is amazing to look back now and see the transformation of their back yard. {I even remember planting the cypress trees that now reach as high at the second story of the house!}

A love of gardening is definitely a trait I received from my mother. There is something so peaceful about a garden, being surrounded by all that greenery and life. And there is something very cathartic and fulfilling about seeing years of hard work turn into such a beautiful escape.
