as much as i love food, sometimes i think that i could live on salads alone. from grilled chicken caesar classics to unusual combinations of spinach and oranges, i love just about every salad recipe i have ever tried.
recently i decided to start making my own salad dressing. i had previously complained that it was too time consuming and i would never use the ingredients again... blah blah blah. well, it's not at all true. making my own salad dressing is definitely one of my new most favorite things. {sorry hidden valley}
here is the recipe for my current favorite oil/vinegar based dressing:
1/2 cup water
1/2 cup apple cider vinegar
3-4 tablespoons basalmic vinegar
2 large tablespoons romano cheese
4-5 shakes onion powder
4-5 shakes oregano
black powder to taste
1 packet italian dressing mix
*blend above ingredients in blender/food processor for 30 seconds.
add 1 3/4 cup extra light olive oil & blend for 90 seconds.
{store at room temp. don't refrigerate!}
it tastes great on spinach salads with cranberries, feta/blue cheese, walnuts, and chicken. this is my go-to salad when i am in a rush. this recipe also makes a great marinade for chicken. i can't take credit for the it, though. i received it from my incredible cook of a mother.

Here is my favorite homemade dressing. It goes great on a salad of spinach, strawberries, walnuts, and bleu cheese.
1/4 c apple cider vinegar
2 tbsps sesame seeds
1 tbsp poppy seeds
1/4 c sugar
2-3 splashes Worcestershire sauce
1/4 tsp paprika
1/2 c vegetable oil
I can't wait to try this. I grew up eating almost nothing but homemade salad dressing so I can't even stand the store bought stuff. i'll have to pass along my mom's orange salad dressing - it's amazing!
mmm, salads! so yummy! my favorite is a take on caesar, but healthier b\c it's eggless. it's not my recipe, but it's so easy to make, we just usually put it on just plain lettuce and eat that!
i just eyeball all the ingredients-
lemon juice (fresh squeezed is best)
dijon mustard
olive oil
coarse salt
fresh ground pepper
parmigiano reggiano or peccorino romano cheese.
whisk together, and wa-la!

mmmm. I live for salads, too. Mmm!
My mother-in-law makes a killer salad dressing that I now make about all the time:
- 1/3 cup balsamic vinegar
- 1 to 2 tablespoons canola oil
- 1 teaspoon garlic powder
- sprinkle of onion powder
- 1 tablespoon apricot preserves (found on with jelly at the grocery store)
- lil bit of salt and pepper
Shake shake shake!
Best on a spring mix salad with crazy stuff like feta, avocados, tomatoes, mandarin oranges, red onions, etc.
i haven't perfected mine yet but:
yellow mustard
green olives, pseudo-finely chopped
white vinegar or apple cider vinegar
virgin olive oil
