Blueberry-Blackberry Crisp

One of my favorite things about summer is the vast array of fresh fruits and vegetables that it brings. From berries to zucchini to fragrant herbs, I try to incorporate seasonal produce into everything I make, but especially into desserts. It just doesn't get much better than a seasonal sweet treat.


This past weekend I took advantage of our local blueberries and blackberries and made a crisp. I used this simple recipe, and just substituted whatever berries I had to make a total of 6 cups.


The end result was the perfect blend of sweet and refreshing and paired quite wonderfully with a scoop of vanilla ice cream.

Wow that looks tasty! What I love most about it is that the recipe calls for ingredients that we always keep in our house, so I have no reason not to try and whip that up! Thanks for the share.

Yum!

It's not anything crazy, but one of my fave summer items is banana pudding. A quick and fluffy version:

- Prepare 2 small boxes Jello vanilla pudding as the directions indiciate
- Add in 2 small boxes Jello FRENCH vanilla pudding and as much milk as the directions indicate
- Mix
- Fold in one medium (thawed) tub of cool whip
- In a bowl, casserole dish or throw-away alumninum roasting plan, alternate layers of the following: Nilla wafers, sliced ripe bananas and the pudding mixture (I usually do 2 or 3 layers of each, finishing with a layer of bananas and wafers)

So this past weekend I was like "I'm going to make a peach cobbler!!!" I totally meant "crumble", but ended up googling cobbler. Delicious, but sooo not the same thing as a crumble. I'll blame it on the Atlanta heat getting to my me ;)

ash, you would be proud! i made a homemade peach cobbler last weekend and a blackberry one this weekend. i wanted to spruce it up so i used this recipe for the crust/crumble. turned out quite delish.

(i actually hand peeled 18 peaches. pretty sure my hand cramped)
